This is from my “use what you have” series:
Green beans, each cut into 3 or 4 pieces
Edamame
Heirloom tomato
Macaroni (two handfuls)
Olive oil (enough to coat)
Vinegar (dash)
Cilantro Pesto (enough to coat mixture; regular cilantro can be substituted)
Salt
Boil green beans and edamame together, reserve boiling water to use when cooking macaroni. Run cooked noodles under cold water. Cut tomato into bite-size pieces, remove seeds as needed. Toss all ingredients in a mixing bowl, store in a pretty covered dish (Depression ware recommended) in the refrigerator.
Note: amounts of the main ingredients can vary depending on how much you have at hand, add more or less depending on your tastes and number of desired servings.

Edamames? I have to look for them at my local Giant store. Would they have something to do with soy beans? I’ll have to go to a specialty store, I think. I’ve heard them memtioned on ther Food Network, but I didn’t pay much attention to it, but if California is doing it, and especially Stasia, I,ll have to get on my high horse and look it up. Edamames, here I come!

Chances are Giant won’t have them, but I bet Wegmans will (in the frozen section). They are soybeans, and I always buy the shelled ones.
